Lemon, herb & Parmesan crusted fish

2 Tbsp breadcrumb
grated zest of 1/2 lemon
1 Tbsp grated Parmesan
1 Tbsp chopper parsley
Salt & pepper (marinate)
2 Tbsp butter
Juice of 1/2 lemon

Pan fry the marinated fish in oil until tender (2-3 mins), turn over & sprinkle crumb mixture.
Brown under grill (2-3 mins).
Add butter & lemon juice.
